About Garlic

Garlic is a long growing allium that is generally cultivated in the fall and harvested in the following spring/summer. Sowing to reaping generally takes 240-270 days. Garlic requires cold temperature, (between 32 & 50 degrees) in order to stimulate the clove to develop into a bulb.

There are two varieties of garlic, hard-neck and soft-neck. Hard-neck garlic develops a flower-stalk in mid to late spring, which is called a garlic scape. These scapes can be pulled to help increase bulb size. (Scapes are a by product and can be used in cooking to add a mild garlic flavor to any culinary dish.) Hard-neck garlic generally produces larger bulbs, with fewer cloves per bulb. Soft-neck garlic does not produce the flower stalk. They are generally thought to be more suitable for growing in southern climates.  Soft-neck garlic is suitable for culinary use, but these bulbs are also braid-able.
