Our Garlic 2023

Here is our 2023 garlic update. While we love our basil, peppers and other veggies, garlic is the real reason that we decided to start this business at Hickory Flat Garlic Company. Our goal is to grow fresh, organic garlic right here in North Georgia. This season we are growing seven varieties of garlic.

 

Music

Music Garlic cloves are hot when consumed raw, but when baked or cooked they sweeten out. Flavor can be described as good, sweet and pungent. Great everyday garlic for cooking.

Red Creole

Red Creole has a robust, rich flavor that seems very deep and earthy. It has a quite hot complex flavor.

Lotus

 

Lotus Garlic is very hot when raw, and still somewhat hot when baked or roasted. Flavors hold up well when cooked. It is our earliest maturing garlic. 

Inchelium Red

. Inchelium Red has a relatively mild but lingering flavor with a tingle. Generally dense heavy bulbs. Can be used raw or cooked. Better for cooking with light dishes since is is not overpowering. Excellent for blending with mashed potatoes.

Thai Fire

Thai Fire has a bold flavor It is pungent and its aroma is equally strong. The fiery flavor will mellow with cooking.

Bogatyr

One of the hottest varieties of garlic. It has a strong rich taste. Pairs great with meat and in soups or heavier dishes. It has been  noted as a great roasting garlic

Georgia Crystal


Georgian Crystal is a clean, fresh tasting garlic. It works well in stir fry, making salsa, infusing with oils or eating raw. It has a mild flavor when eaten raw and a smooth buttery flavor when roasted.
